Hey, Chef Kev here with quick tips for healthy cooking.
People ask me all the time how I can get more vitamins and veggies in my diet. One answer, of course, is a smoothie.
But when you have a family – like a dog, a husband, and me – sucking on a smoothie doesn’t really work well at the dinner table. So, my hint of the day is puree it!
Purees add body to soups and sauces, plus they’re a great way to clean out your veggie crisper and fridge. And thats good because I truly hate wasting food.
When you’re making your soup or sauce on the stove, go ahead turn your oven on.
Roast them in a pan or on a cooking sheet. When they are soft, put your veggies in a bowl along with a little bit of what you are cooking on the stove.
Get an immersion blender and puree it. Then put the puree back into the sauce.
You can get a good immersion blender for about 30 dollars. It will pay for itself when you see how much doesn’t go to waste in your fridge.
I’m a big fan of the puree. It really can turn something blah and runny into something thick and hearty. Plus any way I can get extra veggies in without drinking a fluorescent green smoothie that looks like a science experiment…..is fine by me!
